Lately, buffets seem to be shuttering left and right, and it seems like food halls are rising up to take their place: New food halls have popped up at Durango Station, the Cosmopolitan, downtown’s Fremont, and even off-Strip centers like the Uncommons.

So why are food halls all the rage now, and is this the death knell of the iconic Vegas buffet?
