Published by the Master Brewers Association of the Americas, Aaron's research tackles the difficult question of why there are often large discrepancies between calculated IBU (bitterness), and resulting IBU in finished beer. After more than two years researching and collecting data, Aaron and his team made several surprising discoveries and formulated a method to calculate for the changes in bitterness they were observing.
